Shrove Tuesday
On Shrove Tuesday (the day before Ash Wednesday, also known as Fat Tuesday or Pancake Tuesday) it's customary to eat pancakes. I'm not so good at making pancakes, so we'll be having homemade waffles with local, scrambled pastured eggs and local, pastured pork sausage for dinner instead. For the waffle batter, I double the recipe and use half whole wheat flour and half unbleached, white whole wheat flour. In place of sugar, I use organic sucanat. The recipe makes such delicious waffles. They are good topped with organic maple syrup or fruit syrup. They also reheat well for a snack later in the day or for a quick breakfast the next day.
