Poor Man's Zucchini "Crab" Cakes

I used the first zucchini harvested from our garden to make these tasty zucchini cakes.
For next week's meal plan, I'm going to try this zucchini cakes recipe from The Pioneer Woman's blog served along with some homemade ranch dressing.
I hope our plant gives us more zucchini this season!

ReplyDeletePoor man's crab cakes, LOL. You are right, crab is pricey. I will have to try this when our zucchini produces.
ReplyDeleteYum, I will check out the recipe. Your plant will probably produce more than you can eat!I read somewhere "don't plant zucchini unless you have lots of friends". I'm sure you do have lots of friends, so you will probably be sharing it.
