Homemade Clam Chowder
Recipe from Allrecipes.com
On a cold December day, nothing beats sitting down to a warm bowl of clam chowder for dinner! I've enjoyed clam chowder in restaurants, but never tried making it at home. And since canned chowders can be high in sodium, I avoid buying those. But making my own chowder was much easier than I imagined!
Our new food processor made dicing the vegetables and mincing the whole clams quick and easy! Dave bought the processor for me during the Black Friday sales. He wanted to gift me with something that would lighten my work in the kitchen and help make getting meals together more efficient. Isn't that sweet? I love it! Who said women don't like getting appliances as gifts!
The chowder turned out great, though I'm still working on getting my potatoes diced just the right size. The first time I made the chowder, I diced my potatoes too big and it took awhile for them to cook through. The next time, I diced the potatoes smaller. They cooked up faster, but I felt like the potatoes got lost in the chowder. I like my chowder with chunky potatoes. So the next time, maybe I'll get them just right!
One note regarding the recipe. It calls for 2 tablespoons of red wine vinegar to be added at the end. I wasn't sure if the taste of vinegar would be overpowering in the chowder, so I omitted it. But maybe it adds something special?
