Meal Ideas for Lent - Pasta Fagioli

Pasta Fagioli

This quick and meatless pasta dish is sure to please! 

Pasta Fagioli

1-15 oz can Great Northern beans (or 2 cups Northern beans cooked)
1-28 oz can stewed tomatoes, sliced
16 oz spaghetti sauce (p. 220) {I use a jarred, organic Marinara sauce from Trader Joe's}
Italian seasoning (to taste)
2 stalks celery, sliced thin
1 small onion, chopped
2 cups small spiral pasta, uncooked
salt & pepper (to taste)

In a Dutch oven combine everything and bring to a boil on medium high.  Turn heat down to low.  Cover pan with lid and allow to cook on a slow simmer for 30 minutes or until pasta is tender.  Stir occasionally.  Serves 6.
